Two key flavours to determine matcha:
1.Seaweed aroma: If you can drink a seaweed flavour, sea flavour, because the tea leaves have been grown in shade, retaining more theanine, and the chemical structure of theanine is very close to that of glutamic acid (a constituent of seaweed), so authentic matcha tea will have a faint seaweed aroma.
2.Bitter: Authentic matcha is not bitter! If the tea plant is grown under direct sunlight, the theanine will be converted into catechins (bitter), but shade-grown tea leaves are rarely converted, so the sweet theanine is retained, and the bitter catechins are reduced, making the matcha taste sweet and not bitter.

The best way to taste matcha is to not add anything: brew it directly with warm water, stir it to melt it, then add water and stir it to the consistency you like, and drink it.
